AlXimia es la creación de Álvaro Álvarez-Parilla, un matemático e investigador de las puras y prácticas en la Universidad Autónoma de Baja California (UABC). En 2001 después de aprender de los vecinos en Ensenada un poco de elaborar vino, Álvaro tomó la decisión de comprar siete acres de tierra excelente en el bello San Antonio de las Minas, Valle de Guadalupe. Esperó, además de crear un refugio lindo para su familia, tener la oportunidad de cultivar las uvas de vino en la propiedad.

Alximia

Una década después, AlXimia ha llegado a ser más grande que el negocio familiar que soñó primero. En 2004, después de asistir a un taller vinícola en La Escuelita se le inspiró a Álvaro ensanchar de gran escala su visión del futuro posible de AlXimia. En 2005 elaboró tres vinos, todos recibidos de gran entusiasmo por amigos cercanos y clientes. Gracias a este éxito Álvaro se dedicó a aprender aun más sobre las variedades de uvas que suelen florecer en el norte de Baja California.

En 2008 los sueños de gran escala de Álvaro al fin convergieron a su trabajo en la universidad. Como se inscribió al curso posgraduado de Enología se le ocurrieron las ideas de su propia bodega: un lugar mágico que respeta el medio ambiente donde los visitantes vendrán a manadas para gozar su intrigante y «místico» alrededor y sus vinos sabrosos. Tomó la decisión de llamarla AlXimia, derivado de «alquimia»...en este caso se usa para describir cómo se combinan algunos ingredientes puros al fin de formar algo sofisticado y complicado.

Alximia

Tres años después la bodega queda en vías de construirse, pero se les da a los visitantes la bienvenida para catar los excelentes vinos de AlXimia.

Con la marca de AlXimia se ofrecen Barbera, Cabernet Sauvignon, Syrah y Tempranillo. Tambien se planean añadir Petit Verdot, Viognier y Zinfandel, entre otros. Se etiquetan las botellas con la insignia de AlXimia: cuatro círculos vinculados que representan los cuatro elementos (tierra, agua, viento y fuego) con que se crea gran vino.

Una virtud central de AlXimia es centrarse en los métodos de construir y operar que respetan la Tierra. Las paredes gruesas de adobe permiten el control de temperatura, y mediante el viento se genera la electricidad con que funcionan los sistemas pasivos de enfriamiento y humidificadores. Con los paneles solares se genera la electricidad en sitio, y se lleva de una etapa de elaborar a la próxima el vino mediante un sistema de gravedad. Además se recicla el agua que se usa para producir, y se cultivan las uvas cumpliendo las normas de agricultura orgánica.
